Huckleberry’s Potato Salad
(serves 10-15)
Ingredients:
12 potatoes (cubed and cooked)
2 cups thinly chopped celery
½ cup diced onion
2 Tbsp minced garlic
3 cups mayonnaise
1 tsp salt
2 tsp black pepper
2 ½ tsp cayenne pepper
3 tsp celery salt
3 tsp garlic powder
1 ½ Tbsp Louisiana style hot sauce
Directions:
Combine chopped celery, diced onion, minced garlic, mayonnaise, salt, black pepper, cayenne pepper, celery salt, garlic powder and hot sauce in a large bowl. Gently mix in cooked potato cubes. Place in refrigerator and cool for 4 hours.
