Huckleberry’s BBQ Pork Sandwiches
(serves 15-20)
INGREDIENTS:
1 cup cooking oil
4 cups brown sugar
5 tsp salt
2 tsp cayenne pepper (adjust for spiciness)
2 Tbsp black pepper
2 Tbsp garlic powder
4 lbs boneless pork tenderloin
1 gal (6+ bottles) your favorite bbq sauce
20 picnic rolls
1 lb crispy coleslaw
5 sliced or diced tomatoes
2 sliced or diced onions
DIRECTIONS:
Pre heat oven to 350 degrees f. Combine brown sugar, salt, black pepper, cayenne pepper and garlic powder into a dry mixture. Place half of the BBQ sauce into a large covered roasting pan. Place oil into a large stove top pan over high heat until extremely hot. Pat dry the tenderloins with a clean towel and coat thickly with the dry mixture. Sear the tenderloins by "rolling" them quickly in the hot oil (5-6 seconds total), remove immediately and place directly into roasting pan. Pour remaining BBQ sauce over the tenderloins in the roasting pan, cover and place in oven. Cook at 350 for 1.5-2.5 hours or 30-45 minutes per pound (until cooked through). Check progress after approximately 1 hour. Remove tenderloins from roasting pan once cooked through and slice into chunks. Place chunks into a large bowl and add sauce from the roasting pan to coat. Toast the picnic rolls if you prefer and fill with BBQ pork. Top the pork with any variety of the tomatoes, onions and coleslaw for an excellent flavor experience. Enjoy with friends and a cold brew. Take a nap immediately afterwards.
